Incorporation of artisanal fishery products in children's diets in Chile
To develop healthy food products, based on sustainable fishing from Archipielago Juan Fernandez and San Antonio in Chile, to improve sustainable fishing consumption in children and their families.
The project identifies seafood products from the artisan fishermen of San Antonio and Juan Fernandez Archipelago in Chile, that are less known in the market, are available all year round and need to improve their commercialization.
These products were used to develop prototypes of ready-to-eat meals attractive to children and their families. The prototypes are subjected to sensory and acceptability analyses on groups of volunteer families to develop with them the best products to reach the market. The project also provides fishermen with equipment and training in nutrition labelling and packaging.
