Train staff. Reduce electricity consumption and food waste by 15%. Use the case study to attract 4 other hotels to conduct a similar trial.
The City of Sydney has made a commitment to reduce its carbon emissions by 2030 and become carbon neutral by 2050. As part of that plan they have launched the Sustainable Destination Partnership. The ICRT's My Green Butler has been selected as an associate partner, we have signed a Memorandum of Understanding and we have been invited to approach hotels to encourage them to improve their monitoring and reduction of resource use. We have gained the support of one 5 star hotel and have requested grant funding from the city to implement My Green Butler in 2019. Our activity will be used as a case study to encourage the other hotels in the city to reduce their consumption. We are installing My Green Butler – sustainability management programme – which includes monitoring of electricity , food waste weight scale and guest communication materials including digital displays, in-room TV, web app and daily paper report, showing guests the hotel's consumption per house and per guests and by comparison with other time periods to stimulate awareness. The hotel has agreed to share information with the other hotels, permit to events so other properties can come and visit and for a detailed case study presentation. The City of Sydney has indicated that there is growing curiosity about the case study trial. The My Green Butler service is being discussed in project meetings when we are not present. The challenges are a) buildings are not owned by the hotel, b) hoteliers are nervous about approaching guests, c) it is unknown territory for many and d) all buildings are different in structure, metering and scale which requires custmisation.
